Birthday vlog | How am I during the pandemic?





I still can't believe the whole world is fighting a virus. It's an enemy that's hard to kill. This morning as I was editing this vlog. I saw an article from Time that says, "Welcome to the First Global Economic Depression of Our Lifetimes". I was in state of shock just by seeing the title. In my mind, I keep saying "It can't be." But I know that we're slowly entering that phase. Later on I should read it so I know what will happen or at least get an idea on what will become our "new normal".

Homemade blueberry muffins
Hello earthlings! I might be a little late in sharing this but please bare with me.

I really enjoyed making these delicious and moist homemade muffins. These muffins only lasted for five days. I'm not a tea-person but I'm sure it will be good with a cup of tea. Though I have a few tips when making this. It might not be a big deal for some people but I know there are a bunch of people who watches my video and are beginners in baking or cooking. So for this specific recipe and for any other recipes you will making.

I would like to remind everyone to mise en place their ingredients. What I mean is set a plan and organize all the tools and ingredients you will need. Read the recipe carefully, weigh your ingredients, and make sure your ingredients are in room temperature like the unsalted butter, milk, and/or eggs. Make sure to follow exact measurements and know what kind of oven you have. Do not over mix the batter. 

For instance while I was mixing my ingredients, I noticed I have lumps of brown sugar on my mixture. Some people might think mixing will help get rid of the lumps but you will just end up over mixing your batter. Those kind of situations might affect the consistency of your product.

Wanderlust 

It's so nice to finally leave the small and quiet city. It's crazy to think that it was only last year when we packed our belongings and decided to move to Las Vegas. Of course, it took us  y e a r s  and  c o u r a g e  to decide on it. It wasn't an overnight decision. We had to sit down and list down our options whether it's doable or if this didn't go as planned this is what we're going to do etc...

In the Philippines, summer usually starts in March. If you have visited a tropical country during the summertime you probably have an idea how hot it can get. Our tradition is to go to the beach and hang out with friends or family. And when I think about summer I think about the beach, sleepovers, playing outside, eating halo-halo and MANGOES. 

Chocolate Chip Cookies | They're not that bad. Hear me out first.



Hi loves! How is it going? It seems like the entire nation is on baking mode. All-purpose flour and yeast are worth like a gold these days. Just couple of weeks ago I went to the grocery store to restock my APF and cocoa powder. Unfortunately after making trips to different grocery stores. I didn't find any. I was bummed because I might need to wait for two weeks and I couldn't wait for another week. I had so many recipes I want to try. Thankfully, Walmart has some stock online. I don't know what I'd do if I don't stock up on my baking staples during the lockdown. I'd probably go nuts.

Ever since I started baking, my first on the list to perfect was chocolate chip cookies. It's one of the easiest recipes to make and ingredients are not hard to find, right? But who would ever thought that making cookies can be very veryyy tricky. I tried baking chocolate chip cookies for countless times and I never seem to get it until today. I was already on the verge of giving up because after practicing, reading and researching I still didn't get it. But today I finally made progress on my cookies. One thing I tried doing differently this time is instead of creaming butter and sugar together. I used brown butter and a good quality chocolate chips. It made a huge difference on the flavor.

For the taste, I love the hint of molasses and the bitterness from the chocolate chips. The texture might need a little more work though but I'm quite satisfied on how it turned out. This is an 8/10 ;-)
I can't wait to pass this down to my future children.

Maybe next time I should weigh my cookies so the cookies will cook at the same time. Do you guys have any advice on how I can improve the texture? Because I had this problem before, the day after I bake my cookies, it tends to harden like a rock! Seriously. I was thinking could it be because I over mix my batter? Or is it the cooking time since the sizes are different. Please if you have any advice. Comment them down below. I'd highly appreciate it.
